"The nicest I ever drank," said Diana.

Jen went to the East Coast for her vacation and all I got was this AWESOME bottle of Raspberry Cordial. We are going to get together and drink it while watching the 'Anne' movies. Gosh, they are so emotional to watch. Back and forth between funny, embarrassing and tearful. Such great movies. And come on, Gilbert Blythe, need I say more?
For those of you who don't have travelling friends who bring you Raspberry Cordial, you can make your own! It really doesn't look that hard. Time consuming maybe, but not hard.

Raspberry Cordial
1 lb, 3oz of frozen raspberries
1.25 c sugar
4 c boiling water
2 lemons
In a sauce pan add sugar to frozen raspberries and cook for 20-25 minutes, until sugar has dissolved.
Then mash the mixture thoroughly. Pour the mixture through a strainer and discard pulp.
Add the strained juice of 2 lemons.
Add the 4 cups boiling water.
Let cool. Refrigerate. Enjoy.
