Parsley Harvest

Last week I was more excited than I should have been to make Mashed Potatoes. Why? Because my recipe called for fresh parsley. And it just so happens I have FRESH parsley.Remember when they were wee things? They have taken over!! Unfortunately the recipe only called for 1 tsp of parsley. That's this much:Not much of a dent in the ol' parsley patch.
But see how pretty it looks sprinkled on top. And soon I'll be over the moon to make these because I'll be able to add my own garlic. (Tall thin wisps in the top picture)

I make these potatoes all the time. This recipe is fool proof. Cut, boil, mash, done in 25 minutes (20 mins of boiling) My kind of recipe.

No Fuss Smashed Potatoes
2 lb. red potatoes (about 5 medium), unpeeled, cut into chunks
5 cloves garlic, peeled
1/3 cup MIRACLE WHIP Dressing
1/4 cup 100% Parmesan Grated Cheese
1 tsp. chopped fresh parsley

ADD potatoes and garlic to large saucepan boiling water; cook 20 min. or until tender. Drain and return to saucepan.
MASH potatoes and garlic with dressing and Parmesan cheese until light and fluffy.
SPRINKLE with parsley. Serve immediately.

There's hardly anything I like more than mashed/smashed potatoes. I like to put some fresh, minced dill into the recipe..so fresh!!Thank you...
